BINGING AND BLOATING BRING HOLIDAY CHEER?

Look at the “women’s” magazine headlines this time of year and what is the emphasis? – What to cook and how to cope once you’ve eaten it. Why do people binge over and over again this time of year? Even worse, why do people think that once they’ve binged, they have permission to complain about it? I have one simple solution. It doesn’t require any monetary outlay and the rewards are immediate and far-reaching. The solution is this – discipline!
Discipline is like a four-letter word to many people. Remember the root word – disciple. Are you a disciple of good health habits? Being a disciple doesn’t mean blindly following a person or a principle. According to the dictionary, a disciple can be “an active adherent, as of a movement or a philosophy.” Are you an active adherent or do you only give lip service to good health? Are you a practitioner of a healthy lifestyle or do you just read about it; never really incorporating the things you learn?
Something quite deceptive can happen in the human psyche when reading or studying a matter that can make one think they have incorporated what they have read. For instance, reading a health magazine while eating junk food can trick the brain because satisfaction is being derived physically from the food while the thought process involves the mental information being absorbed. Two separate messages are being sent. One is going to the body and emotions. “I’m feeling so good. My blood sugar is elevating. My brain is producing endorphins. My serotonin level is rising. Yes, I know that I’m eating or drinking things that I should not, but after this meal, I am going to fix this salad in this magazine…” The body’s craving for a particular “fix” is being satisfied. Simultaneously, the message going to the brain is that of health and wellness from the pictures and information in the magazine/book. Confusion can result causing us to think we have actually become healthier when, in fact, we have eaten more bad food that contributes toward dis-ease while we have read about the good food.
This time of year presents many opportunities to practice mindfulness. What are we eating and why? We don’t have to eat just because it’s available. Every time we are presented with our favorite unhealthy foods, we are presented with an opportunity to either let the desire control or to be in control. There is a great sense of mastery that comes with disciplining our flesh. Without vigilant discipline we easily fall prey to our desire for gastronomic satisfaction that often involves eating way too much – binging. Binging and the subsequent bloating from lack of discipline do not contribute to holiday cheer. They contribute to fat and ill-health. For tips on how to handle the various food challenges…just pick up the women’s magazines. You’ll find the same old food themes, with the same food challenges, and the latest tips on how to cook and cope with the consequences.
PASS THE BUTTER

The other day, one of our customers brought the following article to me. I enjoyed it and thought you would too. Betty received this via e-mail. Margarine was originally manufactured to fatten turkeys. When it killed the turkeys, the people who had put all the money into the research wanted a payback so they put their heads together to figure out what to do with this product to get their money back. It was a white substance with no food appeal, so they added the yellow coloring and sold it to people to use in place of butter. How do you like it? They have come out with some clever new flavorings.
DO YOU KNOW…the difference between margarine and butter? Read on to the end…It gets very interesting!
BUTTER…
1. Both butter and margarine have the same amount of calories. Butter is slightly higher in saturated fats at 8 grams compared to 5 grams.
2. Eating margarine can increase heart disease in women by 53% over eating the same amount of butter, according to a recent Harvard Medical study.
3. Eating butter increases the absorption of many other nutrients in other foods.
4. Butter has many nutritional benefits where margarine has a few only because they are added!
5. Butter tastes much better than margarine and it can enhance the flavors of other foods.
6. Butter has been around for centuries where margarine has been around for less than 100 yeas.
MARGARINE…
1. Very high in trans fatty acids.
2. Triple risk of coronary heart disease.
3. Increases total cholesterol and LDL (bad cholesterol) and lowers HDL cholesterol (good cholesterol).
4. Increases the risk of cancers up to five fold.
5. Lowers quality of breast milk.
6. Decreases immune response.
7. Decreases insulin response.
And here’s the most disturbing fact…HERE IS THE PART THAT IS VERY INTERESTING! Margarine is but ONE MOLECULE away from being PLASTIC.
This fact alone was enough to have me avoiding margarine for life and anything else that is hydrogenated. (This means hydrogen is added, changing the molecular structure of the substance.)
You can try this yourself: Purchase a tub of margarine and leave it in your garage or shaded area. Within a couple of days you will note a couple of things: *No flies, not even those pesky fruit flies will go near it. (That should tell you something.) *It does not rot or smell differently because it has no nutritional value. Nothing will grow on it: Even those teeny weeny microorganisms will not find a home to grow. Why? Because it is nearly plastic. Would you melt your Tupperware® and spread that on your toast?

Immunization Debate Heating Up

As more and more vaccines are mandated for our children more and more parents and health care providers are questioning the necessity and safety of the immunizations. The intent is not to tell you what to do, but rather encourage you to be informed and make a knowledgeable decision for your family.
Vaccines have been linked to the emergence and surge of many disorders that were rare 30 years ago and yet are now commonplace among school age children. Autism, Allergies and Asthma, and ADD/ADHD were all considered rarity, yet today are everyday occurrences in schools and pediatrician offices. The list of neurological disorders linked to vaccines must also be considered. A partial list includes : Encephalitis, Retardation, Meningitis, Paralysis, Paralytic Polio, Lupus, Hyperactivity and ADD, Autoimmune disorders, Epilepsy, Blindness & Deafness, SIDS, Mental Confusion-lowered IQ and Brain Tumors.
Vaccines also cause immune suppression by over-taxing our immune system with foreign material, heavy metals, pathogens and viruses. Vaccines deplete our body of vital immune enhancing nutrients, like vitamin C, A and zinc, which are needed for a strong immune system. It is nutrients like these that primes our immunity by assailing the body of a young child with toxins. Vaccines contain many substances known to be neurotoxins. It seems elementary that a very young and immature immune system should not be bombarded with toxins before their blood brain barrier (the shield protecting the brain) is fully developed.
When immunizations were introduced, they were given to children prior to entering school. Now babies have a long journey of immunizations starting at birth, before they leave the hospital and continuing through their teens. The current immunization against Hepatitis B is to be given on the day of birth. Seven vaccines at two months, six more at four months, and as many as eight vaccines at the six month well-baby exam. Seven vaccines injected into a 13-pound two month old infant are equivalent to 70 doses in a 130 pound adult! If a child is fully immunized today, that child will receive 32 vaccinations within the first 12 months!
As if the possible side effects are not enough to think about, we must also be aware of the ingredients in vaccines. Here is a partial list of ingredients that vaccines could contain;
· Mercury
· Aluminum
· Formaldehyde
· Aluminum hydroxide
· Animal tissues: pig & horse blood, rabbit brain, dog & monkey kidney, chick embryo
· Human diploid cells (originating from aborted fetal tissue)
· Monosodium glutamate (MSG)
· Phenoxyethanol (antifreeze)
· Sorbitol
· Sucrose
If you are pro-life, consider for a moment the moral implications of using cells from aborted human babies in vaccine production. If you subscribe to the animal rights movement, take into consideration the animal tissues that are used in vaccines. All other facts aside, these moral issues should be considered.
In summary, this is a vaccination schedule that I would recommend:
1. No vaccinations until a child is two year old.
2. No vaccines that contain thimerosal (mercury).
3. No live virus vaccines (except for smallpox, should it recur).
4. These vaccines should be given one at a time, every six months, beginning at age two:
1) Pertussis (acelluar, not whole cell)
2) Diphtheria
3) Tetanus
4) Polio (the Salk vaccine, cultured in human cells)
American children are the most highly vaccinated kids in the world. This schedule is an alternative to the one that rules our “vaccine nation” (as the Village Voice terms it). In contrast to the CDC’s immunization schedule, it is user-friendly.

Recipe
Sauerkraut
Makes 3 cups
From Chef Mandy Catania
· 1 head cabbage, shredded fine
· ¾ tsp sea salt
· 3 Tbsp lemon juice
· ¼ cup minced fresh dill
· 2 cloves garlic, crushed
Directions:
1. Massage the cabbage with the salt until the liquid starts to release.
2. Let the cabbage rest for 10 minutes and massage it again. Repeat as often as necessary until the cabbage is very juicy. Add the remaining ingredients.
3. Pack the mixture firmly into a large glass jar, crock or bowl. Press the cabbage down until the liquid rises above it approximately 1/8 inch.
4. If you are using a large jar for your kraut, place a weight on top of the cabbage, such as a jar filled with water. If you are using a crock or a bowl, place a plate on top of the cabbage and then a weight. Cover everything with a clean dishtowel.
5. Allow the kraut to ferment in a cool, dark place for at least 3 days (see note).
6. Once the kraut is ready, store it in airtight glass jars in the refrigerator. It will keep for several months.
Note: Kraut may be fermented for up to 14 days, depending upon the desired degree of sourness.
Homemade sauerkraut is delicious and a wonderful aid to digestion.
